Black Olive Dip

You can dress this dip by using good imported olives. Kalamata are a good choice.

  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 1/2 cups drained and chopped black olives
  • 1 small bunch scallions, greens included, chopped
  • 1 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 garlic cloves, minced
  • Tabasco to taste
 

METHOD

Mix mayonnaise and sour cream in medium bowl and blend well.

Stir in olives, scallions, cilantro, lime juice, garlic and Tabasco to taste ( a few drops will generally heat things up enough) . Season with salt and pepper to taste.

Cover and chill well, at least one hour.

A perfect accompaniment to tortilla chips.
