Spicy Bacon Dip

This is spicy, but it's the great taste of bacon that does the trick.

  • 8 slices of bacon
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 2 teaspoons dijon mustard
  • 2 teaspoons horseradish
  • 3 scallions, minced
  • 1 cup shredded Swiss cheese
  • Paprika as garnish
 

METHOD

Cook bacon over low heat.  Low heat ensures that there won't be a lot of fat pockets that were missed.  When very crisp, drain on paper towels and set aside to cool.

When bacon is cool, crumble into bits.  Mix with all other ingredients except for paprika.

Put in a shallow baking dish, sprinkle lightly with paprika, and and bake in preheated 400°F oven for 15 minutes.

Serve with chips and/or crackers.
