Bacon and Crumbled Blue Cheese Dip

 

  • 6 slices bacon
  • 1 (8-ounce) package cream cheese, at room temperature
  • 3/4 cup crumbled blue cheese
  • 3/4 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 teaspoon prepared horseradish
  • 2 tablespoons minced onion
  • Tabasco to taste
 

Method

Cook bacon until crisp.  Drain very well on paper towels.  When drained, crumble the bacon.

Put the cream cheese, blue cheese, sour cream, mayonnaise, horseradish, onion, and Tabasco in a food processor. Pulse until very smooth.

Transfer to a bowl, and put in crumbled bacon and mix with a fork to distribute evenly.  Cover, and refrigerate until the flavors are well integrated, at least one hour or overnight.

This is great with veggies, crackers and with apple slices.

Yield: About 3 - 4 cups
