METHOD
In large skillet saute zucchini and onions in olive oil until tender, about 10- minutes.
Stir in garlic, Italian seasoning, salt and pepper. Sauté 1 minute longer.
Add vinegar, sauté 1 minute or until liquid is absorbed and zucchini is well coated.
Serves: 4
