Tangy Zucchini Sauté

The balsamic vinegar both sweetens and enlivens this zucchini recipe.

  • 4  medium zucchini halved lengthwise and sliced
  • 1  medium onion chopped
  • 2  tablespoons olive oil
  • 2  cloves garlic minced
  • 1  teaspoon Italian seasoning
  • 1/2  teaspoon salt
  • 1/4  teaspoon pepper
  • 1  tablespoon white balsamic vinegar
 

METHOD

In large skillet saute zucchini and onions in olive oil until tender, about  10- minutes.

Stir in garlic, Italian seasoning, salt and pepper.  Sauté 1 minute longer.

Add vinegar, sauté 1 minute or until liquid is absorbed and zucchini is well coated.

Serves: 4
