Wilted Lettuce Salad

When Roger sent this to us, the recipe insturctions read that you should pour the bacon mixture over lettuce that you picked from your own garden.  Alas, for those of us who live in cities, that pleasure is hard to get.  We've adjusted the recipe, but are dreaming of a trip to the country in spring and early summer when lettuce is at its best.

  • 6-strips bacon
  • Into the Bacon drippings add the following
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1/4 cup sugar
  • 3 green onions, sliced on the diagonal.
  • Romaine or mixed green lettuces

 

 

METHOD

Fry bacon until crisp.  When done drain on paper towel, saving bacon drippings.

Shred lettuce in large pieces into a serving bowl.

Put vinegar, water, and sugar into the bacon drippings.  Bring to the boil, then pour directly over the lettuce. 

Garnish with the green onion slices and give a toss.
