Balsamic Watermelon Slices

Watermelon as a salad?  Why not!  This will be gone as soon as you set it out.

  • 1/2 large watermelon, seedless if possible
  • 1 pint ripe grape or cherry tomatoes, quartered
  • 1/2 cup fresh basil leaves, cut into fine strips
  • 2/3 cup fresh mint leaves, cut into fine strips
  • Extra-virgin olive oil
  • Balsamic vinegar
 

METHOD

Cut the watermelon in half length-wise, then cross-cut into 1/4" slices and remove rind. 

Arrange the slices on a large platter.  Top with the tomato quarters and the basil and mint strips.

Drizzle with the oil and vinegar and a little bit of salt and serve.

Serves 6
