Tofu Carrot Ginger Miso Dressing

Maple syrup pours easily and hides its taste with other ingredients. We suggest it as optional if you like a sweet dressing.

  • 1/2 cup grated carrot
  • 1/2 cup silken tofu
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon grapeseed oil
  • 2 tablespoons yellow miso
  • 2 teaspoons chopped peeled fresh ginger
  • 1 teaspoon maple syrup (optional)
  • Salt to taste
 

METHOD

Place all ingredients, except salt, in a blender or food processor. Process until smooth.

Taste for seasoning, then adjust with salt if needed.
