Welcome Home Casserole (Vegetarian )

Don't let anyone tell you that vegetarian food is not comfort food. This dish was waiting for Adrienne when she returned home to North Carolina after a trip to Russia where she picked up an adopted child. It was the 'little child' who led the way. click to read adrienne's story.

  • 1 package whole wheat noodles (elbow, bowties, spirals, etc.)
  • 1 can kidney beans, drained
  • 1 small can (12 oz.) diced tomatoes, drained
  • 1 tablespoons olive oil
  • 2 cloves garlic, chopped finely
  • 1 small onion, chopped
  • 1 cup sliced mushrooms
  • 2 cups broccoli flowers
  • 1 teaspoon basil
 

METHOD

Preheat oven to 350°F.

Cook noodles according to package directions. While noodles are cooking, heat olive oil in a pan and sautéthe garlic, onions, mushrooms, and broccoli for 1-2 minutes, then add 1/4 cup water to the pan and cover for 5 minutes. Remove cover and continue cooking until broccoli is bright green and onions are limp.

When pasta is done, remove from heat and drain, then mix all ingredients together. Put mixture in a casserole dish, cover, and place in oven for 20-30 minutes, or until all flavors have melded together.

Serves: 4 - 6
