Tomato & Mozzarella Pie

"This is a recipe that my Italian Grandmother gave to me many years ago. It is a family favorite." Radelle Knappenberger

  • Dough for one 9-inch pie (purchased pie shell is fine to use)
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/4 cup fresh basil, torn into small pieces
  • 6 ripe (medium-sized) tomatoes, sliced
  • 1 tablespoons virgin olive oil
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper
  • 1/4 cup Kalamata (Greek) olives, chopped (optional)
 

METHOD

Preheat oven to 350°F.

Spread dough on bottom of a lightly-greased 9-inch pie pan.

Spread mozzarella cheese over dough. Place basil on top of the cheese and cover with the tomato slices.

Drizzle the olive oil over the tomatoes, and sprinkle with salt & pepper. If desired, sprinkle chopped Kalamata olives over top.

Bake in preheated 350°F oven for 45 to 50 minutes.

Serves: 8
