Sweet Potato Soufflé

A lovely holiday dish - both Thanksgiving and Christmas.

  • 3 cups cooked, mashed sweet potatoes
  • 3/4 cup sugar
  • 1/4 cup butter, melted
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1 teaspoon ginger
  • 1 teaspoon grated orange zest
  • 1/2 cup milk

TOPPING

  • 1 cup dark brown sugar
  • 1/4 cup butter, melted
  • 1/3 cup flour
  • 1 cup walnuts, chopped
 

METHOD

In large bowl, mix together potatoes, sugar, butter, eggs, salt, nutmeg, cinnamon, ginger, orange zest and milk. Stir until well blended.

Pour into buttered 8 x 11 inch buttered baking dish.

Mix together sugar, butter, flour and walnuts. Sprinkle on potato mixture, smoothing only if necessary.

Bake in preheated 350°F oven for 30 to 35 minutes.

Serves: 6 - 8
