Uncle Al's Ragu Neapolitan

 

This was Alphonse Serena's recipe. An active Democrat, the recipe was requested by the staff of JFK's White House.

  • 3 tablespoons virgin olive oil
  • 2 cloves crushed garlic
  • 3 pounds ground sirloin
  • 2-1 pound cans tomato sauce
  • 1 pound can Italian plum tomatoes
  • 1 cup Chianti
  • Oregano, thyme, and salt to taste
  • 2 raw pork chops, bone in (boneless can be used, also)

 

 

 

METHOD

Sauté garlic in olive oil until translucent. Add ground sirloin. Brown thoroughly and drain fat.

Stir in tomato sauce, plum tomatoes, Chianti and seasonings. Reduce heat to and simmer for 2-3 hours, stirring occasionally.

After 2-3 hours, submerge the raw pork chops in sauce and continue to simmer another 2-3 hours. Pork chops will cook in sauce and flake off the bone. Remove bones and discard.

Serve over thin spaghetti, or rigatoni (Al's favorite), or mostaccioli.

(As an added bonus, this makes an outstanding sauce when preparing homemade Lasagna)
