The
pleasure of this Mediterranean Salad is that it is in small dice. As always
with small pieces, it can stuff a pita bread or top bruschetta.
3 tomatoes
3 cucumbers
Onion, small chopped (optional)
Olive Oil to taste
Lemon juice to taste
Salt & Pepper to taste
Parsley, fresh chopped (optional)
METHOD
Chop tomatoes and cucumbers
and optional onion into small dice. Add olive oil, lemon juice and optional
parsley. Season with salt and pepper. Toss to combine.
