Mediterranean Style Salad

This recipe calls for frozen and canned food, but there's nothing like fresh ingredients if you don't mind the extra cooking time.

  • 1 10-ounce package frozen Italian green beans
  • 1 12-ounce can whole kernel corn, drained
  • 1/2 cup mayonnaise or salad dressing
  • 2 tablespoons chopped, canned pimento
  • 1 teaspoon dried sweet basil, crushed
  • 1/4 teaspoon salt
  • 2 cups seasoned bread cubes or croutons

 

 

METHOD

Cook the beans following package direction, then drain and cool.

Combine beans, corn, mayonnaise, pimento, basil and salt.

Toss and put in refrigerator to chill.

Before serving, add seasoned bread cubes, and toss well.
