Greek Salad with Feta and Olives

We sometimes dream about a Greek salad. Try to find the best olives and the choicest brand of feta for this salad. It really does make a difference to use quality ingredients.

  • 2 cups mixed butter lettuce & radicchio
  • 1/2 cup green bell pepper, chopped
  • 1/2 seedless English cucumber, chopped
  • 1 large ripe tomato, chopped and seeded
  • 1 1/2 tablespoons extra virgin olive oil
  • !/2 tablespoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • Salt & pepper to taste
  • 10 Kalamata olives, pitted
  • 4 ounces feta cheese, crumbled
  • 4 whole pepperoncini

 

 

METHOD

Working in layers, put in first, lettuce, then green pepper, followed by cucumber and last tomato. Top with olives, oil, vinegar, and a sprinkle of oregano. Season with salt (careful as feta is salty) and freshly ground pepper, and toss well. Garnish with olives, feta cheese and pepperoncini.

Serves: 4
