Dill Tofu Yogurt Dip for Veggies

This is a surprising dip. The tastes of tofu and yogurt are bland and lost to the dill and lemon This is a light dip to serve before a large meal.

  • 1 large clove garlic
  • 2 scallions, cut in 1/2 pieces
  • 12 ounces silken tofu
  • 1 cup nonfat yogurt
  • 1 tablespoon lemon juice
  • grated rind of 1 lemon
  • 1 tablespoon dried dill
  • 1/2 - 1 teaspoon salt

 

 

METHOD

Mince garlic clove in a blender. When finely minced, add scallion pieces. Pulse to chop fine. Add silken tofu, yogurt, lemon juice, lemon rind, dill and 1/2 teaspoon salt. Bend on high until combined.

Taste for seasoning. Add more salt if needed.

Serve with crudités.

Yield: About 2 1/2 cups
