Corn and Cheese Casserole

Creamy and rich. Great in the summer at a barbecue or a lovely holiday dish - both Thanksgiving and Christmas.

  • 2 tablespoons shortening to grease dish
  • 3 large eggs
  • 1 (8 1/2 ounce) cream corn
  • 1 (10 ounce) package frozen corn
  • 1 (8 ounce) whole kernel corn, drained
  • 1/2 cup (1 stick) margarine, melted
  • 1/2 cup yellow corn meal
  • 1 (8 ounce) carton sour cream
  • 4 ounces Mozzarella cheese
  • 4 ounces sharp Cheddar cheese
  • 4 ounces can diced green chili peppers
  • 1/2 teaspoon salt
  • 1/4 teaspoon Worcestershire sauce

 

 

METHOD

Heat oven to 350° F and grease long Pyrex dish.

Beat eggs, then add all ingredients and stir until well blended.

Pour into dish and bake on center rack of oven for 1 hour or until firm in center. Let set 10 minutes before cutting.

Serves:6
