Banana Ketchup

We have many names for ketchup. What do you call ketchup, catsup, if it has bananas in it?

  • 1 tablespoon vegetable oil
  • 1 pound very ripe bananas, in 1-inch pieces
  • 1-1/2 teaspoons onion powder*
  • 1/4 cup fresh orange juice
  • 1-1/2 tablespoons light brown sugar (or more, to taste)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Salt and ground white pepper
  • 1 tablespoon white vinegar
  • 1/3 cup lime juice
  • 3 drops red food coloring

 

 

METHOD

Heat the vegetable oil in a medium saucepan (Do not use aluminum unless it is coated with non-stick or enamel because of the acidity). Add the bananas and powdered onion and cook, stirring occasionally, for 5 minutes. Add the orange juice, brown sugar, cinnamon and cloves, and season with salt and pepper. Cook, stirring, until thickened, about 5 more minutes. Remove from the heat and stir in the vinegar, lime juice and food coloring (if desired). Serve at room temperature or chilled. Makes about 2-1/2 cups Ketchup.

*1 medium onion, finely chopped, may be used in place of onion powder. If using fresh onion, sauté until translucent then add banana and follow the recipe. Onion powder is used to create smooth ketchup minus lumps.
