Cliff's Quick Ketchup

This is a handy recipe if you suddenly run out of catsup (ketchup) and don't want to run to the store.

  • 3 (5.5 or 6 oz.) cans tomato paste
  • 1/2 cup sugar
  • 2 teaspoon salt
  • 1 teaspoon celery salt
  • 1 teaspoon white pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground sweet basil
  • 1/2 teaspoon paprika
  • 3/4 cup cider vinegar (5% acidity)
  • 1 1/2 cups water*

 

 

METHOD

Place all ingredients in a medium saucepan with lid. Mix thoroughly, then bring to a boil and boil for 15 to 20 minutes to desired consistency. TIP: Place lid on pot leaving about 1/4 inch space on one side for steam to escape and to allow mixture to thicken. If you do NOT do this, your stove will be covered with drops of Catsup!

Note: to get richer Ketchup, use tomato juice instead of water, if you have it available.

DIET KETCHUP

For 'all-natural' ketchup, use apple-juice in place of water and omit sugar. May not be as sweet as normal ketchup. To make it sweeter without adding sugar, double the amount of apple juice. But be aware, it will have to cook much longer to reach the consistency of ketchup. However, the natural sugar content of the juice will be doubled in the process.

For sugar-free use all ingredients but omit the sugar. Follow the recipe and when finished, set aside to cool completely. Add Aspartame or any other non-nutritive sweetener to taste and mix well. Then place in clean container and refrigerate. (Note: if you use only Aspartame sweetener it will not have any aftertaste but will taste if sugar has been used. The Ketchup must be cooled before adding the sweetener because heat destroys the sweetness of Aspartame.)
