This
recipe for carrot, golden sultanas and cheese salad comes to us from Australia.
It is one of those recipes that makes you remark 'why didn't I think of
that?'
4 carrots, washed, peeled
and grated
2 cups cheddar or gruyere
cheese, grated
1 cup sultanas
Salt and pepper to taste
METHOD
Mix all ingredients together
and season with salt and pepper.
If sultanas are very
dry, soak them in warm water for 15 - 20 minutes, drain and dry before
using.
