Brussels Sprouts with Peppered Bacon

You pepper the bacon itself for this Brussels sprouts recipe. Cooking bacon slowly releases more of the fat than browning over high heat.  Nice for a holiday meal whether Thanksgiving or Christmas

 

  • 1 1/2 pounds Brussels sprouts
  • 8 ounces bacon, thickly sliced
  • Freshly milled pepper
  • Salt to taste
 

METHOD

Clean and quarter Brussels sprouts. Steam for 5 minutes, or until soft but still with a little bite.

Lay bacon strips side by side on a piece of waxed paper. Grate pepper directly over bacon. Press pepper into bacon. Turn and repeat on other side.

Put bacon in cold sauté pan. Heat pan over medium heat and cook slowly until bacon is browned. Remove. Drain on paper towels. Crumble and set aside.

Pour off all but about one tablespoon bacon drippings. Put Brussels sprouts in pan with drippings. Stir to coat. Cook over medium heat for 3 - 4 minutes, or until sprouts are tender.

Remove sprouts with slotted spoon to drain. Toss in serving bowl with crumbled bacon and salt to taste.

Serves: 6 - 8 as side dish
