Broccoli Walnut Salad with Orange Vinaigrette

If you are lucky to get broccoli that has more florets than stalk, go for it. But if it's stalky, peel the stalks and cut in small pieces. Delicious.

  • 1 bunch broccoli, cut into bite-sized pieces
  • 1 cup raisins
  • 4 slices thick bacon, cooked & crumbled
  • 1 cup toasted walnuts, chopped
  • 1/2 medium red onion, finely sliced

Orange Vinaigrette

  • 1 teaspoon grated orange zest
  • Juice of 1 orange
  • 2 teaspoons balsamic vinegar
  • Salt to taste
  • 1/4 teaspoon freshly ground pepper
  • 4 tablespoons olive oil
 

METHOD

Toss all ingredients together in a large bowl.

Vinaigrette: Mix all ingredients but the oil with a whisk. When blended add the oil and whisk again. This is a sweet dressing that is tasty on salads with strong tasting ingredients, such as arugula or dandelion. It is also an excellent dressing for grains.

Pour over salad and toss well.

Take the time to roast the walnuts. Roasting brings out the full flavor of nuts and a toasted walnut is delicious. Both walnuts and broccoli are among the best foods you can eat. Broccoli is rich in Vitamins A, C, K, beta-carotene and folate and has the minerals potassium and phosphorus. Combined with walnuts this is a real powerhouse salad. Walnuts are loaded with Vitamin E, folate, thiamine, and riboflavin. In addition walnuts have magnesium, manganese and potassium. Love this salad!
