METHOD
Grate potatoes on coarse
grater into large bowl. Put into a linen tea cloth and squeeze hard to
remove as much moisture as possible.
Put potatoes in large
bowl. Mix in flour and salt. Slowly stir in milk, using just enough to
hold together. Let stand for 30 minutes.
Heat a heavy skillet.
Melt butter in skillet and drop in boxty in heaping tablespoons. Cook
for five minutes on each side.
Serve with sprinkling
of brown sugar and additional melted butter.
While serving, please
sing:
"Boxty on the griddle,
Boxty in the pan,
If you don't eat your boxty
You won't get your man."
