Beets with mint and goat cheese

Beets are classics at holiday time. Goat cheese adds zing while mint enhances sweetness.

  • 3 tablespoons olive oil
  • 1/4 cup shallot (about 4 large) finely chopped
  • 1 1/2 pounds cooked beets
  • 1 tablespoon minced mint
  • 1/2 cup orange juice (1 large juice orange)
  • 3 ounces goat cheese, crumbled
  • 1/4 cup chopped walnuts
  • Salt to taste
 

METHOD

Heat oil in fry pan large enough to hold beets. Stir in shallots. Cook over medium heat to caramelize, about 10 minutes.

Slice beets and stir into shallots. Sprinkle with mint, and pour on orange juice. Stir to coat. Cook over medium heat, uncovered, for 7 - 10 minutes, or until most of the juice has cooked off.

Turn into serving bowl. Sprinkle with crumbled goat cheese, walnuts and salt to taste. Stir gently to distribute cheese.

Serves: 8 - 10 as side dish
