Roast Asparagus (with Parmesan)

It is very convenient to roast asparagus and free one burner on the stove. When you roast, the asparagus flavor becomes more pronounced.

  • 2 - 3 pounds bunches asparagus, trimmed (peeled if needed)
  • 4 tablespoons oil or melted butter
  • 4 tablespoons warm water
  • Salt and freshly ground pepper, to taste
  • 2 tablespoons dry white wine
  • 2 ounces parmesan cheese, shaved
 

METHOD

Preheat oven to 425°F.

Toss asparagus in oil or butter to coat evenly. Season with salt and pepper.

Arrange asparagus in baking dish. Sprinkle with water and cover tightly with foil. Bake for 10 minutes.

Remove foil. Continue roasting until asparagus are fork tender, about 1- to 15 minutes more.

Remove to serving platter and sprinkle with shaved parmesan.

Serve immediately.
