Baked Asparagus with Goat Cheese & Prosciutto

Asparagus and prosciutto is a classic combination. This updates it with goat cheese.

  • 6 slices prosciutto, finely chopped
  • 2 pounds medium asparagus, tough ends trimmed
  • 3 tablespoons olive oil
  • Freshly milled black pepper
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons parsely, finely minced
  • 2 teaspoons grated lemon zest
 

METHOD

Cook bacon in heavy large skillet over medium heat until brown and crisp. Transfer to paper towels and drain. Crumble bacon; set aside.

Preheat to 500°F.

Put asparagus on rimmed baking sheet. Drizzle olive oil over all, coating each spear, turning to cover completely. Sprinkle with freshly milled pepper to taste.

Roast asparagus in preheated 500°F oven until tender to a fork, about 6 - 7 minutes.

Remove to a serving platter. Distribute goat cheese and prosciutto evenly over all. Sprinkle parsley, then grated lemon peel over all.
