Spinach Balls

Mary doesn't remember who gave her this spinach recipe, but thanks that long ago friend for giving her family so many savory holidays.

  • 2 packages frozen chopped spinach
  • 1 package (12 ounces) herb dressing
  • 3/4 cup butter
  • 1/2 cup Parmesan cheese
  • 1 tablespoon garlic salt
  • 1 teaspoon thyme
  • 1 onion, finely chopped
  • 6 eggs, beaten
 

METHOD

Cook spinach according to package directions. Drain in colander, squeezing out all liquid.

Melt butter. Let cool. When cooled mix all ingredients together. Shape into bite-size balls.

Bake in preheated 350° F oven for 20 minutes.

Yield: About 60 - 80 balls.

Tip: Mary makes these ahead. She puts them on cookie sheets and slides the sheets into the freezer until firm. Once frozen, she puts them in zip-loc bags until ready to use.
