Green Cabbage Slaw

This is a no-mayonnaise slaw that seems to stay fresh longer than one weighted by mayo. Our mothers had no choice but to grate cabbage by hand. Aren't food processors wonderful!

  • 3 tablespoons pignolia nuts
  • 1/2 medium cabbage
  • 1 carrot
  • 1 red pepper
  • 2 tablespoons extra virgin olive oil
  • Juice of one lemon
  • Salt & freshly milled pepper to taste
 

METHOD

Toast pignolia nuts. This can be done in a heavy-bottomed fry pan over very low heat, stirring to brown al sides. Do not over-brown.

Grate cabbage, carrot and red pepper in food processor, and put in large mixing bowl.

Add the oil and the lemon juice. Season with salt and pepper to taste. Mix well and add pignolia nuts to garnish.

Serves 4 - 6
