This
is a wonderful accompaniment to grilled and barbecued meats, and is filling
enough to be a pleasant lunch dish. Green beans and shallots go well together.
Combine French beans,shallots,
zucchini, butter beans, corn, carrots, rice, yogurt, and herbs. Arrange
lettuce leaves on a platter. Spoon bean mixture on top. Serve chilled.
Excellent in summer to serve with grilled meats.
