Chinese Braised Turnips

So simple and so delicious.  This is a Shanghai recipe .

  • 1 pound turnips, in 1 inch slices, cut diagonally
  • 12 medium dried black Chinese mushrooms
  • 2 tablespoons peanut oil
  • 3 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1/2 cup reserved liquid from mushrooms
 

Method

Soak mushrooms in warm water for 20 minutes.  Discard soaking water.  Remove stems, cut into bite-size pieces , and simmer in fresh water to cover for 20 minutes.  Strain and save 1/2 cup of this which is now a mushroom stock. 

Steam turnips over boiling water until soft, about 15 to 20 minutes.  Drain and set aside.

 

Heat wok until very hot.  Swirl in oil and heat again so that oil is hot.  Stirring in turnips, mushrooms, soy, sugar and reserved stock.

Maintaining high heat, stir and cook until turnips and mushrooms are glazed.

Serves: 4 to 6
