Casserole of Shrimp, Bean Curd (Tofu) and Vegetables - Chinese

This Chinese casserole is an example of the use of tofu as an ingredient to be combined with others. Here the shrimp gives its flavor to the tofu. In Chinese cooking, tofu is an ingredient to be used with others.

  • 3/4 pound tofu (bean curd)
  • 1/4 pound shrimp, shelled
  • 1/2 cup bamboo shoots
  • 4 dried shitake mushrooms, soaked
  • 1/2 cup peas, cooked
  • 1 1/2 cups water
  • 1 - 2 teaspoons soy sauce, or to taste
  • 1 1/2 tablespoons cornstarch
  • 2 tablespoons water
 

METHOD

Dice tofu, shrimp, bamboo shoots and mushrooms to a small and even dice (about 1/2 inch or less).

Bring water to boil. When boiling, stir in diced ingredients and peas. Stir in soy sauce to taste.

Bring back to a boil, then immediately lower flame to medium-low. Cook for 3 minutes.

Combine cornstarch with water, whisking with a fork to blend well. Stir into center of casserole, mixing well to make a sauce. Add more water if sauce is not the consistency that you prefer.

Serves: 4
