Scrambled Tofu

Simplicity itself.

  • 1 teaspoon grapeseed oil
  • 1/2 cup chopped green pepper
  • 1/2 medium red bell pepper
  • 6 mushrooms, chopped
  • 1 pound extra-firm or firm tofu, drained and mashed with a fork
  • 1 tablespoon mirin
  • 1 tablespoon soy sauce
  • 1teaspoon grated ginger
  • Freshly ground pepper to taste

 

 

METHOD

Sauté onion, peppers and mushrooms in oil for 3 minutes.

Stir in tofu, mirin, tamari and ginger. Cook over medium heat for 5 minutes, stirring often. Season with black pepper to taste.

Serves: 4 - 6
