Blackberry Pancakes

  • 1 cup blackberries
  • 2 large eggs
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 cup butter, melted
 

Method

Beat eggs until light and fluffy. Stir in buttermilk and baking soda.

In a separate bowl, sift flour, salt, sugar and baking powder together, then add to the egg mixture, to make a thin batter.   Stir in blackberries and butter.

Cook on a very hot, lightly greased griddle.  When bubbles appear at the edges, flip pancakes. Turn only once.
