Baked Spicy Pears with Vanilla Cream

These baked pears are a contribution from a bed and breakfast owner who knows how to make people happy with an exciting breakfast.

  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 6 pears, halved and cored
  • 1/2 cup apple juice
  • 1 1/2 cups granola
  • 2 tablespoons flour
  • 1/4 cup soft butter
  • 1 1/2 cups low fat sour cream
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla
 

METHOD

Preheat oven to 350°F. Grease 9 x 13 baking pan.

Mix brown sugar, cinnamon, nutmeg and cloves spread over bottom of baking pan. Place pears, cut side down over sugar mixture. Pour apple juice over pears.

In mixing bowl, mix cereal and flour. Mix in butter with a fork until crumbly. Spread over pears. Bake in preheated 350°F oven about 20 minutes, until topping is lightly browned and pears are tender when pierced with a fork.

While pears are baking, mix sour cream, cream and vanilla in small bowl. Allow to blend at room temperature.

Serve pears warm topped with cream. May be served directly from the baking pan on a buffet, with cream alongside, or in individual dishes with cream on top.
