Jigger's Pumpkin Pancakes

"In most parts of America, the word diner means breakfast ...People skip the hearty breakfast on weekdays, but on weekends they look forward to a big plate of pancakes..." From More Retro Diner

  • 1 3/4 cups white flour
  • 2 teaspoons baking powder
  • 4 tablespoons light brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1 1/2 cups milk
  • 1 cup cooked pumpkin or squash, fresh or canned
  • 2 large eggs, beaten
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup bacon drippings
  • Butter
 

METHOD

Mix together flour, baking powder, sugar, salt, and spices.

Stir in milk, pumpkin, eggs, vanilla extract, and bacon drippings.

Preheat and grease griddle or skillet with butter. Use about 1 cup of batter per pancake and cook, flipping only once. Serve warm with real maple syrup.
