Pancakes a la Kristof

I individually refrigerate the extras in plastic baggies and reheat in the microwave (still in the baggie) on 50% power for 50 seconds for instant breakfast.

  • 4 medium eggs, room temperature
  • 1 1⁄2 cups milk (warmed, or at room temperature)
  • 4 level teaspoons baking powder
  • 1 tablespoon double-strength “Watkins” liquid vanilla
  • 3 teaspoons sugar
  • 3 cups Bisquick

Variations:

  • Substitute buttermilk for milk
  • Add 1 teaspoon baking soda
  • Substitute almond extract instead of vanilla
  • Add 1⁄4 cup cooking oil to batter when using nonstick pan
  • Use non-stick griddle, or nonstick spray
 

METHOD

Beat eggs with a whisk.

Add balance of ingredients, except Bisquick, and whisk together. Then add Bisquick & whisk together until there are no more lumps. Let Stand for batter to absorb ingredients and thicken (1⁄2 hr or so)

Yield: 10 pancakes
