Banana Pancakes

  • 2/3 cup unbleached flour
  • 1/2 cup whole-wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/3 cup milk
  • 2 tablespoons vegetable oil
  • 1 medium very ripe banana, mashed
 

Method

Combine both flours, baking powder, and salt in mixing bowl.    In a separate bowl, mix together milk and oil.

Stir moist ingredients into the dry, then fold in banana.  Do not overmix.

Cook on a very hot, lightly greased griddle.  When bubbles appear at the edges, flip pancakes.  Turn only once

Serves: 6
