Berkshire Apple Pancake

This pancake recipe is baked in an oven.

  • 2 1/2 apple, peeled cored and chopped
  • 1/2 apple, cut in thin spirals for garnish
  • 3 eggs, beaten
  • 3 cups flour
  • 1 1/2 tablespoons baking powder
  • 5 tablespoons sugar
  • 2 cups milk
  • 3/4 teaspoon vanilla
  • 3/4 teaspoon cinnamon
  • 5 tablespoons butter
  • 1/4 cup light brown sugar, firmly packed
  • warm maple syrup for serving
 

METHOD

Preheat oven to 450 °F.

Mix together egg, flour, baking powder salt, sugar, milk, vanilla, cinnamon and chopped apples. Stir just to a lumpy batter.

Melt butter in a 10" iron skillet--pour batter into skillet and arrange apple spirals on top.

Bake for 15 minutes in preheated 450 °F. Reduce temp to 350 and continue baking for 40 minutes or until a toothpick comes out clean.

Sprinkle brown sugar on top, slice into wedges and serve with warm syrup.

Serves: 4 - 6
