Benjamin's Flapjacks

Make sure you have a hot griddle or skillet when you make flapjacks. Enjoy the sizzle.

  • 1 1/4 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon apple pie spice
  • 1/8 teaspoon baking soda
  • 1 egg, beaten
  • 3/4 cup apple juice
  • 2 tablespoons honey
  • 1 tablespoon cooking oil

 

 

METHOD

Stir together flour, baking powder, salt, spice and baking soda.

In a small bowl stir together egg, juice, honey and oil. Add all at once to flour mixture. Stir until blended but still lumpy.

Put 1/4 cup batter onto hot lightly greased griddle or HEAVY skillet. Watch closely. Turn when edges bubble.

Makes 8 (4-inch) flapjacks.
