Chinese Marbled Eggs (tea eggs)

Sometimes hese are called tea eggs because they are cooked in tea,sometimes they're called marbled eggs for the beautiful marble pattern the tea leaves. There is also a sweet tea egg recipe on the site. click here

 

  • 6 hard-boiled eggs
  • 2 tablespoons dark tea leaves or 4 tea bags
  • 2 tablespoons soy sauce
 

METHOD

Crack eggs all over with the back of a spoon. DO NOT REMOVE SHELLS.

Simmer tea leaves/bags for five minutes in 2 1/2 cups water. Tea should be dark. Stir in soy sauce. Put in eggs and set aside to stand one hour or until liquid is cool.

Peel to serve.

Serves: 4 - 6
