Cracker and Hard-boiled Egg Salad

Here's a simple use of hard-boiled eggs, this time mixed with crackers.

 

  • 1 stack saltine crackers
  • 1 cup pickles, chopped
  • 1 cup onions, chopped
  • 1 cup green bell pepper, chopped
  • 1 jar pimento, chopped
  • 5 hard boiled eggs, chopped
  • 1 pint real mayonnaise
  

METHOD

Crumble crackers and mix with other ingredients in order, adding mayonnaise last.

Serve as you would a potato salad.

Serves: 4 - 6
