Corn Meal Pancakes

Using corn meal is a different way to make pancakes. The taste of corn is always satisfying.

  • 1 cup flour
  • 1 cup cornmeal
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 tablespoons sugar
  • 2 cups buttermilk
  • 2 tablespoons oil
  • 2 eggs
 

METHOD

Sift dry ingredients. Add liquid ingredients. Whisk till smooth. Consistency should be like heavy cream. Add more milk to thin if necessary.

Cook as you would do any pancake.
