Granny's Corn Cakes

Does anything take us to the south like corn cakes? Imagine eating these at daybreak on a farm. Southern cooking is comfort cooking.

• 6 slices of bacon, cooked and broken up into pieces
• 2 cups creamed corn
• 6 eggs
• 1 cup flour
• 1 teaspoon salt
• 1 tablespoon baking powder

METHOD

Combine all ingredients and drop by spoonfuls onto hot greased griddle.

Serve with hot sugar syrup or hot pancake syrup.

Serves: 6
