Bagels with Smoked Salmon and Tomato and Caper Salsa

Bagels with a difference! Great as a breakfast in bed.

  • 4 bagels
  • 1/2 cup (100 g) cream cheese
  • 7 ounces (210 g) sliced smoked salmon
  • 2 medium-size plum tomatoes, seeded and diced
  • 1 scallion, finely chopped
  • 1/4 red onion, finely chopped
  • 1 tablespoon (3.75 g) chopped fresh dill or parsley
  • 1 teaspoon (3.75 g) small capers
  • 2 tablespoons (30 ml) lemon juice
  • 1 tablespoon (15 ml) olive oil
 

 

Method

Cut the bagels in half and spread with cream cheese.  Spread the smoked salmon on the bottom halves of the bagels.  Stir together the tomatoes, scallion, red onion, dill, capers, lemon juice, and olive oil.  Layer the salsa over the salmon on the bagels, place the other bagel halves on top, and serve.

Serves: 4
