Apple-Raisin Matzo Brie - a Weight Watchers Recipe

      • 4 (6-inch) squares whole-wheat matzo
      • 2 cups boiling water
      • 1 large apple, peeled, cored, and thinly sliced
      • 1/4 cup raisins
      • 2 large eggs
      • 1 egg white
      • 1/4 cup fat-free milk
      • 1 tablespoon sugar
      • 1/2 teaspoon orange zest
      • 1/4 teaspoon cinnamon
      • 1/4 teaspoon salt
 

Method

Coarsely crumble the matzo into a large bowl; add the boiling water and let soak about 1 minute; drain off the water.  Let cool about 5 minutes, then add the apple and raisins, stirring to combine.

Meanwhile, beat the eggs, egg white, milk, sugar, orange zest, cinnamon, and salt in a medium bowl.  Pour over the matzo mixture, stirring to combine well.

Spray a large nonstick skillet with nonstick spray and set over medium heat.  Add the matzo mixture, spreading it evenly.  Cook, shaking the skillet occasionally, about 1 minute.  Cook, covered, until firm and lightly browned on the bottom, about 4 minutes.

Uncover the skillet.  Place a large plate on top and invert the skillet.  Slide the matzo brie onto a large plate, then slide it back into the skillet and cook until set and lightly browned, about 1 minute longer.  Cut into 4 wedges.
