Granola

Caroline made this granola for a ski trip the family took. It is low in fat and filled with energy food. Use walnuts or almonds, or a mix of both.

  • 3 cups rolled oats
  • 1/2 cup mixed nuts, chopped
  • 1/4 cup sunflower seeds
  • 1/2 cup wheat germ
  • 1/2 tablespoon cinnamon
  • 1/2 teaspoon powdered ginger
  • 1/2 teaspoon powdered cardamom
  • Salt to taste
  • 1 teaspoon vanilla
  • 2 tablespoons canola oil
  • 2 teaspoons orange zest
  • 2 tablespoons orange juice
  • scant 1/2 cup honey
  • 1/2 cup raisins
  • 1/4 cup dried blueberries or cranberries

    METHOD

    Preheat oven to 300° F.

    Keeping raisins on the side, toss the dry ingredients together. In separate bowl, mix wet ingredients, blending thoroughly. Coat dry ingredients with the oil and sweetener.

    Spread on lightly oiled baking sheet. Bake in preheated 300° F oven until golden, mixing every 10 minutes. When done, about 30 minutes, add raisins and let cool. Store in tightly covered jar.

    Yield: 5 cups
