Snazzy Summer Casserole

  • 8 cups sliced zucchini (sliced in wheels, it does not matter if they are a little big it is really better if they are big)
  • 4 medium tomatoes sliced
  • 2 onions -red, yellow or white-diced
  • 2 ears of corn -sliced of of ears
  • 1 medium bell pepper- diced

Sauce:

  • 1/2 cup fresh basil chopped
  • 2 cups cottage cheese
  • 1/2 cup milk
  • 1 cup pasta sauce
  • 1/4 cup red wine vinegar
  • 1 teaspoon pepper
  • 3 cloves garlic, diced
  • Topping: 2 cups cheddar or pepper jack cheese

 

 

Method

Preheat oven to 350°F. Grease 13"X9" pan.

In a bowl combine sauce ingredients. Stir to combine.

in a separate bowl combine corn, peppers and onions. In pan layer veggies in this order: 1/2 of the zucchini, 1/2 of the tomatoes, 1/2 of the veggie mix, and 1/2 of the sauce. Repeat.

Cover with foil and bake for 1 hour in preheated oven.  Remove from oven and sprinkle cheese on top, replace foil and place back in oven for 5 minutes.  Remove from oven and allow to cool for 5 minutes.  Slice and serve with a fantastic green salad from your garden and some warm biscuits and your family will be begging for more.
