Cranberry Filled Acorn Squash

Another great cranberry recipe.  We love Thanksgiving and Christmas for helping us use cranberries.

  • 4 small acorn squashes
  • 1 cup chopped unpared apple
  • 1 cup fresh cranberries, chopped
  • 1 small orange, peeled and diced
  • 1/2 cup brown sugar
  • 2 tablespoons butter, melted
  • Dash of salt -to taste
 

Method

Preheat oven to 350° F.

Cut squash in half lengthwise, remove seeds and stringy pith.

Place cut side down on a lightly greased 13 x 9 x 2 inch baking dish.  Bake in preheated 350°F oven for 35 minutes. 

In a bowl, combine apple, cranberries, orange, brown sugar and melted butter.

Turn cut side of squash up.  Sprinkle with salt, then fill with fruit mixture.   Continue baking for another 25 minutes or until squash is tender.

Serves: 6 - 8
