Cranberry Stuffed Acorn Squash

  • 2 medium acorn squash
  • 1 apple, chopped
  • 1/2 cup cranberries (fresh or frozen), chopped
  • 1  orange, peeled and chopped
  • 1/2 teaspoon cinnamon
  • 2 teaspoons honey
 

Method

Cut the squash in half. Remove seeds and stringy pith.

Combine all remaining ingredients, except honey. Fill squash with this mixture. Drizzle honey over squash. Place in a  pan and cover with aluminum foil or a lid. Bake for 25 minutes in a preheated 400°F oven.

Remove foil and continue baking until squash is tender, about 20 minutes.

Serves: 4
