Zucchini Saute with Mint and Goat Cheese

  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 1 medium onion, very thinly sliced
  • 1 red or yellow bell pepper, cut in fine strips
  • Salt and freshly milled pepper, to taste
  • 3 tablespoons chopped fresh mint
  • 3 oz soft goat cheese, crumbled
  • 2 tablespoons walnuts, chopped
 

Method

Cut the zucchini into thick diagonal slices. Cut the slices lengthwise to make matchsticks; set them aside.

Heat the oil in a heavy-bottomed skillet and cook the onion for 5 minutes or until it is softened. Add the bell pepper, salt, black pepper, and zucchini and continue cooking, stirring often, for   4 - 5 minutes.

Remove from heat and pour into serving bowl.  Mix in the mint and goat cheese.  Garnish with sprinkling of walnuts.

Serves: 4 as side dish
