Method
In a colander, Shred zucchini on the large holes of a grated. Sprinkle with salt and place in a sieve or colander for 20 minutes. Press water out with the back of your hand. You can also put this in a tea towel, let stand and wring gently in the towel.
Combine all other ingredients and mix to combine. Stir in zucchini. Chill at least one hour.
